Breakfast, Healthy Snack or Dessert?? Take Your Pick!
Just sweet enough for a dessert but also perfect with your morning coffee! Simple and quick (less than 5 minutes prep) and great for traveling or when your on-the-go!
This recipe was inspired by my recent trip to San Francisco. Traveling can make it difficult to eat clean and healthy. And eating healthy when its not convenient to eat healthy is when it’s most important to have nutritious alternatives to sugary, GMO-filled, processed food stuff! Luckily on my trip there was a Trader Joe’s within walking distance from my hotel so I could cheaply stock up on some organic apples, macadamias, raw veggies and a few other whole food staple items. However, these little bites of delicious goodness (with no added or refined sugar) will definitely be part of my next travel pack!
- 8-10 oz. organic coconut butter
- 1 cup raw hazelnuts
- 3/4 cup organic shredded coconut
- 12 black mission figs
- 1 tsp. organic vanilla extract
- Organic cinnamon to taste
- Pinch or two of himalayan pink salt
Pulse hazelnuts, coconut shreds, and figs in a food processor until its a little finer than granola-like texture. In a mixing bowl add hazelnut mixture with slightly warmed coconut butter, vanilla extract, cinnamon and salt. Mix with your hands and mold into balls. Place in glass or parchment lined pan and place in fridge to cool and harden. The warmed coconut makes the mixture pliable and easy to mold into balls then in the fridge the coconut hardens quite quickly for a firmer finish. Enjoy!
